Terni is in the southern part of Umbria. It is the smaller of the two provinces in the region Umbria and a modern, dynamic city, rebuilt after the Second World War.

Terni now is a culinary destination with many trendy bars and restaurants. The busiest area is Via Cavour and Via Roma. Every weekend the streets are filled with people eating and drinking outside.

In Via Cavour is restaurant La Piazzetta, offering local and seasonal cuisine. The menu and wine list change every season. In this restaurant is a good vibe, La Piazzetta has the right atmosphere and ambiance to have a nice lunch or dinner with your family and friends. The food and wine they offer are really outstanding!

Federico is the owner of restaurant La Piazzetta. I have known him for some years now. In 2012 I organized a festival with my friend from Terni, Marco, to promote the region Umbria. Umbriabeecoming was meant to attract more visitors and tourists in Umbria. For the promotion of this region we’ve organized several Umbrian wine tastings and presentations in Holland together with the Italian society Dante Alighieri.

It wasn’t the first time I had dinner at La Piazzetta. The authentic pasta dish “ciriole” with black local truffle remains one of my favorite Umbrian dishes. The home made pasta they serve is excellent and absolutely worth trying.

Umbria Blog | Massimo’s Truffle Book

Massimo Fignani is chef-cook and he owns an organic farm in Tuscany. The farm produces Italian products like truffle and Lardo di Colonnata IGP.

Massimo was present at the yearly Christmas market in Siena, Il Mercato nel Campo. On a portable electric cooktop he prepared the most delicious pasta dishes with truffle sauce.

I have made a video of Massimo in which he explains the story of the precious and delicate flavor called ” truffle”.

The truffle “fungo” epigeo grows underground. For the development of the truffle the environmental conditions are essential. The climate, the soil humidity, type of soil and trees determine whether truffles can grow. The white truffle is one of the most precious and wanted truffles in Italy. One finds them mostly in Tuscany and Piedmont. There are many different kinds of truffles, also black truffles are cultivated in Italy.

The best period to eat the white truffle “Bianchetto” is March to Aprile, while the black truffles “Nero Estivo” and “Nero Uncinato” are mainly harvested in the summer.

Black truffles can be used raw or lightly cooked, while white truffles are carefully wiped clean and should never be cooked. White truffle is more fragrant than the black truffle.

Umbria Blog | White Truffle market in Città di Castello

Each year at the end of October Città di Castello celebrates the white truffle with a market dedicated to this precious delicacy. From October 28 to November 1, 2016 was the 37th edition of this truffle market, Il Tartufo Bianco. One sells not only white truffle from Umbria but also delicacies from other regions in Italy like herbs, Sicilian cannoli, olives from Puglia and much more, often accompanied by local wines.

Città di Castello is a lovely town, situated 50 km north from Perugia. In the historical center one find tiny streets and a pleasant square with bars and cafés.

North Umbria is known for its white and black truffle. I find truffle one of the best ingredients in my food, hence I often use truffle for pasta sauce, in risotto or for meat dishes. Truffle sauces are not made with only truffles, but are mixed with different flavors.
